Zhong Yu Yuan Wei Wanton Noodle 忠于原味雲吞麵 has been a Tiong Bahru Market fixture for over three decades, and its name—'true to the original taste'—is a promise kept in every plate. The stall is most famous for its 'Bu Jian Tian' char siew wanton noodles, named after the elusive cut of pork taken from the pig's underarm, a part that never sees sunlight and is extraordinarily tender—just 2kg from a 100kg animal.The Premium Wanton Noodle with Bu Jian Tian char siew is $6 or $12, while the regular version is $5. The char siew is marinated for hours and roasted over charcoal in small batches, sliced thick with alternating layers of lean meat and fat, lightly charred on the outside with a gentle honeyed sweetness. The noodles are Cantonese-style—long, thin and springy—tossed in a savoury sauce. Be prepared for a wait, as even a handful of customers ahead can mean 20 minutes or more. The stall opens Wednesday to Thursday and Saturday to Sunday, 7am to 1pm.
