Mr Dum Biryani is a celebrated hawker stall at Pasir Panjang Food Centre, recognised with the Singapore TOP Heritage Food Award in 2021 for its outstanding Pakistani-style dum biryani. The dish is prepared using the traditional dum method, where fragrant basmati rice and tender chicken are sealed in a pot and slow-cooked over low heat, allowing the spices to permeate every grain.The result is a biryani that is aromatic, fluffy, and deeply satisfying. The stall is staffed by a Pakistani chef from Lahore who brings authentic techniques and recipes to the Singapore hawker scene.
