Jia Xiang Mee Siam 佳香 is a one-woman hawker operation at Redhill Food Centre that has earned a MICHELIN Guide recommendation for good reason. The stall has been running for over 40 years, using the same recipes passed down from the hawker's mother, who is now in her 80s — everything from the sambal to the crispy flour bits is made from scratch with quiet, unwavering dedication.A bowl of Mee Siam costs just $3.50 and comes generously topped with rice vermicelli, hard-boiled egg, tau kwa, tau pok, chive cubes and two types of chilli — hae bi and belacan. The gravy leans slightly sweet with a gentle sourness, and those house-made crispy bits stay crunch even after sitting in the broth. You can add fried egg, fried tau kwa or ngoh hiang for a little extra.
